Pumpkin Oat Muffins
1 c. flour
2 tsp baking powder
1 tsp pumpkin pie spice
1/4 tsp baking soda
1/2 tsp salt
3/4 c. canned pumpkin
1/2 c brown sugar
1 egg
1/4 c milk
1/4 c vegetable oil
1 c quick oats
1/2 c raisins or 1 c. chocolate chips
*crumb topping
Mix dry ingredients. Combine pumpkin,
br. sugar, egg, milk, oil, oats, and raisins in a bowl. Add
dry ingreds. all at once, stirring enough to moisten. Spoon
batter into muffin cups and sprinkle with crumb topping. Bake 400
f 18-20 mins or till golden brown.
*Crumb topping:
Combine 1/2 c brown sugar, 1 Tsp flour, 1/4
tsp pumpkin pie spice, and 2 Tbsp butter. Mix till crumbly. Place
on top while muffins are still hot.
