Bev's 65 minute Bread Copyright Beverly A. Qualheim 2015
1 cup warm water
1 tablespoon raw sugar
1 heaping TBsp of instant yeast
(In a large bowl, mix these 3 together- and let sit for 5 minutes till foamy)
3-4 cups unbleached flour
2 TBsp of Olive Oil
1 teaspoon salt
Add
these 3 to the mix, and then stir, pound, stretch, pound, punch,
squeeze with your hands, for at least 10 minutes till it's smooth.
Make this into a ball and place on a cookie sheet or cake pan that has
been sprayed with oil.
(Heat oven to 400 F)
Cover and place bread in a warm place for 30 minutes till it expands to twice it's size.
Make knife cuts in top, drizzle olive oil on top and sprinkle sweet basic or other herb of your choice on top.
Place in oven and bake for about 20 mins until top is brown.
Remove and let cool a little! Not too much cos it's so good warm with butter!!
