Bev's 65 minute Bread

fresh baked bread!

  • 1 cup warm water 
  • 1 tablespoon raw sugar
  • 1 heaping TBsp of instant yeast
  • (In a large bowl, mix these 3 together- and let sit for 5 minutes till foamy)

  • 3-4 cups unbleached flour
  • 2 TBsp of Olive Oil
  • 1 teaspoon salt

  • Add these 3 to the mix, and then stir, pound, stretch, pound, punch, squeeze with your hands, for at least 10 minutes till it's smooth.  Make this into a ball and place on a cookie sheet or cake pan that has been sprayed with oil.  
  • (Heat oven to 400 F) 
  • Cover and place bread in a warm place for 30 minutes till it expands to twice it's size.
  • Make knife cuts in top, drizzle olive oil on top and sprinkle sweet basic or other herb of your choice on top.
  • Place in oven and bake for about 20 mins until top is brown. 
  • Remove and let cool a little!  Not too much cos it's so good warm with butter!!
